Toasted Coconut & Almond Granola

This is the first granola recipe we ever posted, and for years now it's been our go-to recipe. It comes together with only 8 ingredients, and after making it just once, you might never go back to buying store-bought granola ever again.
Ingredients
- 3 cup rolled oats
- 1 cup raw almonds
- 1/2 cup raw pumpkin seeds
- 1/2 cup raw sunflower seeds
- 3/4 cup unsweetened shredded coconut
- 1/4 tsp salt
- 1/2 cup maple syrup
- 1/4 cup vegetable oil

Preheat the oven to 325°F / 160°C. Line a baking sheet with parchment paper.

In a large bowl, combine the oats, almonds, pumpkin seeds, sunflower seeds, coconut, and salt.

Add the maple syrup and oil, and mix well to coat everything evenly. Spread the mixture onto the prepared baking sheet.

Bake for about 30 minutes, or until lightly golden. Stir twice during baking to ensure even toasting. Let cool completely on the baking sheet. The granola will continue to crisp up as it cools.

Once cooled, stir in any add-ins you like. If adding chocolate, be sure the granola is completely cool to prevent it from melting. Enjoy!
