A chipotle is a smoke-dried ripe jalapeño chili pepper and comes in different forms: from powder to flakes, marinades, and sauces. It's a great way to season your dish and to give it a delicious spicy, smoky flavour. The diced chipotle peppers in adobo sauce are what make these plant-based fajitas spicy and taste so incredible!

📝 Ingredients

  • 1 Tbsp vegetable oil
  • 1 medium onion
  • 3 garlic clove
  • 1/2 tsp salt
  • 3 bell pepper
  • 1 1/2 cup mock chicken pieces
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp sweet paprika powder
  • 1/2 tsp chili powder
  • 1/4 tsp ground black pepper
  • 12 small soft flour tortilla
  • 3 Tbsp chipotle peppers in adobo sauce
  • 1 avocado
  • 2/3 cup salsa
  • 1/2 cup shredded red cabbage
  • 1 lime

👨‍🍳 Instructions

  1. 1Heat the oil in a sauté pan over medium-high heat. Add the onion, garlic, and salt, and cook for 4 to 5 minutes, or until golden.
  2. 2Then add the bell peppers, mock "chicken", and spices. Cook for 5 minutes. Add a splash of water as needed to deglaze the pan.
  3. 3Meanwhile, heat a separate large pan over medium-high heat. Toast a single tortilla at time, for a few seconds on each side, until golden.
  4. 4Returning to the fajita mixture, add the chipotle sauce. Cook for an extra 2 minutes.
  5. 5Assemble the fajitas with the bell pepper mixture and your desired toppings. Squeeze some fresh lime juice over top, and enjoy!
