Cherry ripple ice cream

Sweet, juicy cherries and vanilla custard ice-cream, perfect for cooling off on a warm day. Seriously simple to prepare and no need for an ice-cream maker. How can you resist?

- 500 g cherries
- 150 g golden caster sugar
- 500 g fresh vanilla custard
- 300 g double cream softly whipped
- 1 tsp vanilla extract

Pour the cream and custard mix into an ice-cream maker and churn (or freeze in a container) until softly frozen – you’ll need to be able to stir the cherries through.

Warm the cherries with the sugar until it just dissolves. Spoon the ice-cream into a large container and stir through the cherries to make a ripple effect. Freeze until needed.
