These simple muffins take very little time to make, do not require any special equipment (you won't even need an electric mixer), and bake up with a soft, tender, vanilla soaked crumb studded with plenty of melty chocolate chips.

  • 3/4 teaspoon kosher salt, OR 1 1/4 teaspoon table salt
  • 1 1/2 teaspoons baking powder
  • 3 large eggs
  • 1/2 cup (107 grams) brown sugar
  • 1/3 cup ( 66 grams) granulated sugar
  • 1 cup (227 grams) buttermilk
  • 3/4 cup (150 grams) extra virgin olive oil (or any kind of oil such as vegetable, canola, safflower, avocado, grapeseed, or coconut oil)
  • 1 tablespoon pure vanilla extract
  • 1 cup (177 grams) mini chocolate chips
