📝 Ingredients

  • 3 tbsp niter kibbeh (Ethiopian spiced butter)
  • 2 bunches collard greens (chopped)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tomatoes (chopped)
  • 1 tbsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp cardamom
  • 1 tsp black pepper
  • Salt to taste

👨‍🍳 Instructions

  1. 1Add Niter Kibbeh to a pot.
  2. 2When melted, add onions, garlic, and tomatoes.
  3. 3Add cumin, coriander, and cardamom, and let it cook for about 5 minutes on low heat.
  4. 4Add the chopped collard greens and stir.
  5. 5Add salt, black pepper, paprika, and cayenne pepper.
  6. 6Cook for about 20 minutes, stirring every few minutes, till the water is mostly evaporated.
  7. 7Taste for salt and add more if needed.
