📝 Ingredients

  • 1 pound stir fry beef strips
  • 3 bell peppers (different colors, sliced)
  • 1 large sweet onion (sliced)
  • 10-12 flour tortillas (fajita size, warmed)
  • 3 tablespoons olive oil
  • 1 1/2 teaspoons Worcestershire sauce
  • 1/2 teaspoon liquid smoke
  • 4 cloves garlic (crushed)
  • 1 1/2 tablespoons Fajita Seasoning (Penzey's)
  • 1 1/2 teaspoons cumin
  • 3/4 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 2 limes (cut into wedges)
  • 1 cup Queso Fresco
  • 1 cup salsa
  • 1-2 avocados (sliced)
  • 1/2 cup cilantro

👨‍🍳 Instructions

  1. 1In a bowl, mix together all marinade ingredients.
  2. 2Heat a large skillet (preferably a cast iron skillet) over medium-high heat.
  3. 3Drizzle beef strips with half the marinade and then sear in skillet for 2-3 minutes on each side until slightly browned/blackened. When done, remove from pan and set aside in a bowl.
  4. 4In the same skillet over medium-high heat, sear the veggies drizzled with the remaining marinade. Toss occasionally and cook until tender but slightly firm and slightly browned (about 5 minutes).
  5. 5Throw meat back in the pan, toss to combine, and serve.
  6. 6Assemble fajitas by placing meat & veggies on a warm tortilla and top with fresh lime juice, avocado slices, salsa, cheese, and cilantro.
