Apple Baked Oatmeal is an easy make-ahead gluten-free breakfast topped with sugar-free caramelized apples. A healthy meal with cozy Fall flavors!
📝 Ingredients
- 2 1/2 cups Old Fashioned Oats
- 2 tbsp apple pie spice
- 1 tsp baking powder
- 2 cups 2% reduced-fat milk (or plant-based milk for a vegan or dairy-free version)
- 1 large egg (or vegan egg substitute)
- 1/2 cup (sugar-free) honey or pure maple syrup ((plus 2 TBSP for caramelizing apples))
- 2 tsp pure vanilla extract
- 2 tbsp apple sauce (unsweetened)
- 1 large apple (cored and sliced (either sweet or tart apples))
- 2 tbsp unsalted butter (or coconut oil for a dairy-free version or vegan)
👨🍳 Instructions
- 1Preheat oven to 375 F and grease a baking dish (either 8 x 8-inch, or 8 x 5-inch). In a large bowl, combine oats, apple pie spice, and baking powder. Set aside!
- 2Then, in a separate bowl, whisk together milk, an egg, honey or pure maple syrup, vanilla extract, and apple sauce until well combined. Gently stir the oat mixture with the milk mixture until incorporated. Pour into reserved greased baking dish.
- 3Bake for about 35-40 minutes or until a toothpick inserted in the center comes out mostly clean. Let cool at room temp for at least 10 minutes before serving -- or overnight, loosely covered.
- 4Meanwhile, prepare the caramelized apples. In a large no-stick skillet, melt unsalted butter over medium heat, stir in honey, and cook apples for about 5-7 minutes or until golden brown.
- 5Top apple baked oatmeal. If desired, garnish with pomegranate seeds.
