  • 3 cloves garlic (minced)
  • 2 medium zucchini (thinly sliced)
  • 2 medium yellow squash (thinly sliced)
  • 1 medium red bell pepper (diced)
  • 16 ounces frozen spinach (thawed and squeezed dry)
  • 12 sheets oven ready lasagna noodles
  • 2 cups ricotta cheese
  • 1 large egg
  • salt and pepper (to taste)
  • 2 1/2 cups marinara sauce
  • 2 cups mozzarella cheese (shredded)
  • 1 cup Parmesan cheese (grated)
  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1 pinch nutmeg
  • salt and pepper (to taste)
