Delicious one skillet meal made with zucchini squash, potatoes, and bacon.

📝 Ingredients

  • 1 pound bacon (diced into 1 inch pieces)
  • 8 medium sized potatoes (peeled and chopped)
  • 1 onion (diced)
  • 1 zucchini squash (chopped)
  • 1 yellow squash (chopped)
  • 1/2 tsp salt (or more)
  • 1/4 tsp black pepper

👨‍🍳 Instructions

  1. 1Cook bacon in a large skillet over medium heat till very crispy. Drain off all but about 1 Tbsp grease.
  2. 2Add potatoes to the pan and cook till crisp-tender, about 15-20 minutes. (You can add a little water to the pan to speed things up a bit.)
  3. 3Add zucchini and squash and cook for about 5 minutes longer. (Don’t overcook the squash, you don’t want it all mushy.)
  4. 4Season with salt and pepper and serve immediately.
