I love making beef stir fry because it's a quick and flavorful meal that's perfect for busy weeknights.
📝 Ingredients
- 1 pound flank steak
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1/2 teaspoon baking soda (optional)
- 1/2 teaspoon sesame oil
- 1/2 cup unsalted beef stock
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1 tablespoon rice vinegar
- 2 teaspoons brown sugar
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil
- 4 cups broccoli florets (2" pieces)
- 1/4 cup water
- 1 cup sliced red bell pepper (1/4" thick)
- 1/2 cup sliced carrots (1/8"thick)
- 1/2 cup sliced white onion (1/4" thick)
- 2 teaspoons minced garlic
- 1 teaspoon minced ginger
👨🍳 Instructions
- 1Prepare the Beef – Cut flank steak against the grain into ¼" thick slices about 2 inches long.
- 2Marinate the Beef – In a medium bowl, whisk together the soy sauce, cornstarch, baking soda (if using), and sesame oil. Add the sliced beef and toss to coat. Marinate for 10 minutes.
- 3Make the Sauce – In a medium bowl, whisk together the beef stock, soy sauce, oyster sauce, cornstarch, rice vinegar, and brown sugar. Set aside.
- 4Cook the Beef – Heat a wok or large skillet over medium-high heat. Add vegetable oil and sesame oil. Once hot and shimmering, carefully add the beef in a single layer. Cook without moving until browned, about 2 minutes. Stir-fry until no longer pink, 1 to 2 minutes. Transfer to a clean plate.
- 5Cook the Vegetables – Add the broccoli and water to the pan. Stir-fry until the florets are bright green and the water has evaporated, about 2 minutes. Add the bell pepper, carrots, and onions, stir-fry until tender, about 2 minutes. Reduce the heat to medium. Cook the garlic and ginger until fragrant, 30 seconds.
- 6Thicken the Sauce – Make a well in the center of the pan, and turn the heat to medium-high. Whisk the stir-fry sauce and then add it to the pan. Stir continuously until thickened, about 1 minute. Add the beef to the pan and stir to combine. Cook until the broccoli is tender and the beef is warm, about 1 to 2 minutes.
- 7To Serve – Serve with your desired side dish, like steamed rice or noodles.
