Tartare sauce for asparagus

This tartare sauce for asparagus is a fresh alternative to classic hollandaise. Instead of mayo, it uses cottage cheese, which makes the sauce light yet creamy. Wild garlic and chives bring the flavours of the whole spring season to the plate. The sauce is ready in ten minutes and goes well with both white and green asparagus. When wild garlic season is over, simply use parsley or more chives instead. The secret is in the preparation: use a tall container and a stick blender, and pour in the oil very slowly – then the sauce emulsifies reliably and becomes lovely and creamy.

Ingredients

  • 0.5 Bund Schnittlauch
  • 0.5 Bund Bärlauch (oder Petersilie als Alternative)
  • 1 Eigelb (sehr frisch, Bio-Qualität)
  • 200 g körniger Frischkäse
  • 100 ml neutrales Öl (z.B. Sonnenblumen- oder Rapsöl)
  • Salz
  • Pfeffer aus der Mühle

Instructions

    Schnittlauch und Bärlauch waschen, trocken schütteln und in etwa 2 cm große Stücke schneiden. (1 Minute)

    Eigelb, körnigen Frischkäse und die Kräuter in ein hohes Gefäß geben. Mit dem Pürierstab kurz pürieren, bis die Kräuter fein zerkleinert sind. (1 Minute)

    Das Öl in einem dünnen, gleichmäßigen Strahl langsam zugeben, dabei den Pürierstab langsam hoch- und runterbewegen, bis die Sauce cremig emulgiert ist. (2 Minuten)

    Mit Salz und frisch gemahlenem Pfeffer abschmecken.

    Vor dem Servieren etwa 10 Minuten im Kühlschrank durchziehen lassen, damit sich die Aromen verbinden. (10 Minuten)
