Gochujang mayo

This gochujang mayo is a quick dip with character. Japanese mayonnaise provides a creamy, umami-rich base, while gochujang brings a sweet and spicy Korean element. Honey and lime juice round everything off and take the edge off the heat. Mix it together in just five minutes, then leave it in the fridge for at least 30 minutes so the flavours can meld. It goes well with grilled meat, prawns, chips, sandwiches, sushi and, surprisingly, green asparagus. If you like it hotter, add another tablespoon of gochujang; if you prefer it milder, stick to the basic amount. It keeps in the fridge for about a week.
Ingredients
- 10 EL japanische Mayonnaise (ersatzweise „normale" Mayo)
- 2 EL Gochujang
- 3 EL Schnittlauch (frisch gehackt)
- 1 Limette (davon der Saft)
- 2 TL geröstetes Sesamöl
- 2 TL Honig
- Salz

Limette halbieren und den Saft auspressen. Schnittlauch fein hacken.

Japanische Mayonnaise, Gochujang, Limettensaft, geröstetes Sesamöl und Honig in einer Schüssel verrühren, bis eine glatte, einheitliche Sauce entsteht.

Schnittlauch unterheben und alles abgedeckt mindestens 30 Minuten im Kühlschrank ziehen lassen.

Vor dem Servieren mit Salz abschmecken und nach Geschmack noch etwas Gochujang oder Limettensaft nachjustieren.
