Jam Thumbprints

A buttery dough, rolled in coconut or finely ground walnuts or pecans, and finished with a thumbprint of jam, always a Christmas favorite.
Ingredients
- 3-1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 pound (3 sticks) unsalted butter, softened at room temperature
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup sweetened flaked coconut
- 1 egg beaten with 1 tablespoon water
- Your favorite jam (strawberry, raspberry, apricot)
Instructions
- 1
Whisk together the flour and salt in a small bowl.
- 2
Cream the butter, add the sugar together and blend; add the vanilla.
- 3
Add the flour to the creamed butter about 1/4 cup at a time. Wrap in plastic and refrigerate for 30 minutes.
- 4
Preheat oven to 350 degrees F.
- 5
Pour coconut into a pie plate and prepare egg wash.
- 6
Pull off sections of the dough and roll into 1-inch balls.
- 7
Dip in the egg wash, roll in the coconut and place them on ungreased, bare baking sheets.
- 8
Press a light indentation in the top of each ball with your finger and drop about 1/4 teaspoon of jam into each indent.
- 9
Bake at 350 degrees F for about 20 to 25 minutes or until golden brown, rotating trays halfway through the cooking period.
- 10
Remove from oven and let rest on cookie sheet for a few minutes before transferring to a cooling rack.
- 11
Makes about 2-1/2 dozen, depending on how you roll them.
