📝 Ingredients

  • 1 cup dried red kidney beans (soaked overnight)
  • 3 cups water
  • 1 can (13.5 ounces unsweetened coconut milk)
  • 2 cups long-grain white rice (rinsed)
  • 1 Scotch bonnet pepper (left whole)
  • 3 scallions (chopped)
  • 4 sprigs of fresh thyme
  • 2 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  1. 1Simmer beans: Rinse the soaked kidney beans and place them in a large pot with 3 cups of water. Bring to a boil, then reduce heat and simmer until beans are tender, about 1 hour.
