Biscotti Recipe

Bake up a batch of classic, crunchy almond biscotti. This twice-baked recipe is ideal for dunking in coffee or tea!
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup whole almonds (toasted and coarsely chopped)

Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Whisk dry: In a medium bowl, whisk together flour, baking powder, and salt.

Cream butter: In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

Combine ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped almonds.

Shape logs: Divide the dough in half and shape each half into a log approximately 9 inches long and 2 inches wide on the prepared baking sheet.

Bake logs: Bake for 25 minutes, or until the logs are light golden brown. Remove from the oven and let cool for 10 minutes.

Slice logs: Transfer the logs to a cutting board and, using a serrated knife, cut diagonally into 1/2-inch thick slices.

Bake slices: Place the slices cut side down back on the baking sheet and bake for an additional 10 minutes, or until they are golden and crisp.
