- 1 handful of cilantro, chopped finely
- juice of 1 lime
- salt and pepper
- 1 green plantain
- vegetable oil, for frying
- salt
👨🍳 Instructions
- 1--- Hearts of Palm Ceviche ---
- 2Drain the hearts of palm. Halve them lengthwise and slice them finely. Add to a mixing bowl
- 3Add the other ingredients (tomato, green onion, cilantro, lime juice, salt and pepper) and mix well. Place in individual bowls when eating as a starter, or place in a larger serving bowl when sharing. Set aside while preparing the plantain chips

- 5Peel the green plantains. Using a peeler, make thin slices of plantain. You can either do it lengthwise (as in pictures), or make round, coin-like chips

- 7Take out and place on paper towels to drain excess oil. Salt. Serve with the hearts of palm ceviche
