  • 3 pounds potatoes
  • 4 eggs (cooked)
  • 2 celery ribs (diced)
  • 1 red onion (diced)
  • 1 cup mayonnaise
  • 1/3 cup cider vinegar (or white vinegar)
  • 1/4 cup granulated sugar (*see notes)
  • 2 tablespoons yellow mustard
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon celery seed

    Scrub, peel, and slice the potatoes.

    Put the potatoes in a pot of water and bring them to a boil. Cook for 10 minutes until tender.

    Hard-boil the eggs and cool them in ice water. Peel and slice the eggs.
