Herb Roasted Salmon

Oven baked herby salmon on a bed of potatoes and green beans
📝 Ingredients
- 500 g salmon joint
- 3-4 potatoes (suitable for roasting)
- small handful extra fine green beans (approx 200g)
- drizzle mild olive oil
- tiny pinch turmeric (sprinkle)
- tiny pinch black pepper
- small pinch dried oregano
- 1/2 cup extra virgin olive oil
- 1 garlic clove (finely chopped)
- good squeeze lemon (approx 2 tbsp)
- sprinkle of salt
- small handful fresh thyme (finely chopped)
- small handful parsley (finely chopped)
- small handful fresh coriander (cilantro, finely chopped)
- small pinch dried oregano
- small pinch red chilli flakes
👨🍳 Instructions
- 1In a bowl add a good drizzle of mild olive oil, a tiny pinch (sprinkle) of turmeric and black pepper
- 2Peel and chop the potatoes into inch wide cubes, and add to the bowl. Mix well then transfer the potatoes to a wide roasting pan. Cook for 20 minutes, turning the potatoes half way
- 3In the bowl with the turmeric and black pepper, add the salmon and green beans and mix gently.
- 4Once the potatoes have been in for 20 minutes, lay the salmon and green beans on top of them and cook for another 15 minutes
- 5Meanwhile, finely chop the herbs and add to a bowl with the extra virgin olive oil, garlic, sprinkle of salt, lemon, dried oregano and red chilli flakes. Taste and adjust the sauce as necessary
- 6When the salmon is nearly done, take out and drizzle on most of the herb sauce. Put back in the oven for a further five minutes.
- 7Serve warm with the extra herb sauce at the table
