Persian-Style Jeweled Rice (Gluten-Free)

This Persian-Style Jeweled Rice is lush with its intriguing aromatic spices and fruits, and is the perfect accompaniment for many entrees or it can be a vegetarian main course.

Ingredients

  • 2 cups raw basmati rice
  • Kosher or fine sea salt
  • 5 tablespoons, unsalted butter, divided
  • 1 large onion, trimmed, peeled, and finely chopped
  • 1 clove garlic, peeled and minced
  • 1/4 teaspoon saffron threads, crumbled and soaked in 1/4 cup very hot water
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/8 tsp ground allspice
  • 1/4 tsp ground black pepper
  • 1/4 tsp ground cumin
  • 1/3 cup golden raisins or currants
  • 1/2 cup dried cranberries, soaked in warm water for 5 minutes and drained
  • 3 tbsp plain yogurt
  • 1/2 cup blanched slivered almonds, roughly chopped
  • 1/2 cup roughly chopped pistachios
  • Additional dried cranberries (also soaked and drained)
  • Thinly sliced green onions
  • Ground sumac, to taste, optional
