These Bacon Wrapped Pork Medallions are coated in smoky bacon and seasoned with a flavorful spice rub that tastes like it came from a fancy steakhouse. I love that I can get it on the table in under an hour. Sometimes I serve them as a main dish, but they also make a great appetizer for birthday dinners or special family nights.

📝 Ingredients

  • 1 pork tenderloin (cut into about 8 to 10 portions that 2" thick)
  • 8-10 slices thick-cut bacon
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon brown sugar
  • 1 teaspoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika

👨‍🍳 Instructions

  1. 1Preheat the oven to 400 degrees F.
  2. 2In a large non-stick pan over medium-high heat, cook the bacon strips until about half-cooked.
  3. 3Mix all the Spice Rub ingredients in a small bowl.
  4. 4Rub the spice mixture onto the pork tenderloin BEFORE cutting it into medallions.
  5. 5Wrap each medallion in a piece of bacon and secure it with a toothpick.
  6. 6Place a seasoned cast-iron skillet over high heat and once hot, add the pork medallions and cook on both sides until browned 3-4 minutes.
  7. 7Spoon over a bit of the released bacon fat onto each medallion and transfer the skillet into the oven. Bake for 15-20 minutes.
  8. 8Remove toothpicks before serving and sprinkle medallions with chopped fresh parsley.
  9. 9Serve!
