  • 1 inch ginger (sliced)
  • 3 garlic cloves

  • 1/4 tsp salt (or more to taste if desired)
  • 1 tbsp dark brown sugar (or palm sugar)

  • 1.5 lbs boneless chicken thighs (cut into 1 inch pieces)
  • 10 wooden skewers (soaked in cold water, at least for 1 hour.)
  • Oil (to brush on, to make sure it doesn’t stick)
  • Black pepper and chopped Thai basil (to sprinkle on top)
  • Romaine lettuce (to serve)

👨‍🍳 Instructions

  1. 1--- Spice Mix ---
  2. 2Place all the ingredients in a small food processor and pulse until you have a smooth paste. Set aside.
  3. 3--- Chicken Kebabs ---
  4. 4Mix the chicken and spice mix together, and set aside for at least 1 hour to marinate, preferably upto overnight. Also, place the wooden skewers in water, to soak overnight as well.
  5. 5The next day, skewer the chicken, dividing it up between the 10 skewers.
  6. 6Prepare the grill to a medium high heat, and brush the grill with some oil.
  7. 7Place the chicken skewers on the grill, and cook them about 5 - 10 minutes per side until the chicken has nice grill marks. Cook the chicken kebabs on all sides.
  8. 8Sprinkle black pepper and chopped basil on top before serving. Serve with Romaine lettuce (optional).
