High-Protein Big Mac-Inspired Loaded Fries Recipe

In our Big Mac loaded fry recipe, lean beef cooked in bone broth is layered onto baked French fries with high-protein Big Mac sauce, with plenty of pickles.
📝 Ingredients
- 3 russet potatoes, peeled
- 2 tablespoons olive oil, divided
- 2 teaspoons salt, divided
- 1 pound lean ground beef
- 3/4 teaspoon pepper, divided
- 1/2 cup beef bone broth
- 1/2 cup Greek yogurt
- 1/4 cup cottage cheese
- 2 tablespoons sugar-free ketchup
- 1 tablespoon Dijon mustard
- 2 teaspoons pickle brine
- 1 teaspoon nutritional yeast
- 1/2 teaspoon sweet paprika
- 1/2 cup sliced pickles
👨🍳 Instructions
- 1Slice the potatoes into batons and submerge them in cold water. Soak for 30 minutes.
- 2Preheat the oven to 425 F.
- 3Drain the fries and dry them completely.
- 4Toss the fries with 1 tablespoon of olive oil and 1 teaspoon salt, then arrange on a parchment-lined sheet tray.
- 5Bake the fries for 30 minutes, flipping them halfway through. Sprinkle them with ¼ teaspoon salt while hot.
- 6In the meantime, make the beef and Big Mac sauce. To make the beef, heat 1 tablespoon of olive oil in a skillet.
- 7Add and crumble the beef until browned, about 5 minutes. Season with ½ teaspoon each salt and pepper.
- 8Add the bone broth and simmer to reduce, about 5 minutes further.
- 9To make the Big Mac sauce, add the yogurt, cottage cheese, ketchup, Dijon, pickle brine, nutritional yeast, paprika, ¼ teaspoon each salt and pepper to a compact blender or food processor and blend until smooth.
- 10Assemble the fries on a large plate or platter.
- 11Top them with the crumbled beef.
- 12Drizzle the beef with Big Mac sauce and top with pickles to serve.
