Olive Oil Cake

This olive oil cake is moist and flavorful, with light citrus notes from the olive oil and lemon. It stays moist and tender for days. For a change of pace, try it with orange juice and orange zest.
Ingredients
- 2 cups all-purpose flour (or cake flour)
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3 large eggs (room temperature)
- 1 1/2 cups granulated sugar
- 1 cup olive oil
- 1 cup whole milk
- 3 tablespoons lemon juice
- 1 tablespoon lemon zest
- powdered sugar for dusting

Preheat the oven to 350 degrees.

Whisk the flour, salt, baking powder, and baking soda together in a medium bowl.

In a large bowl, stir together the eggs, sugar, olive oil, milk, lemon juice, and lemon zest.

Brush the bottom and sides of a 9-inch springform pan with olive oil. Line the bottom of the pan with parchment paper.
