Slow Cooker Honey Lime Pork

A sweet and savory dish made with simple ingredients.
Ingredients
- 1/3 cup low sodium soy sauce
- 1/4 cup honey
- 1 lime (juice only)
- 2 garlic cloves (minced)
- fresh ginger (one-inch piece, grated)
- 2 tablespoons avocado oil
- 2 pounds pork tenderloin
- salt and pepper to taste
- 1 tablespoon cornstarch

Mix: In a small bowl, mix the soy sauce, honey, lime juice, garlic, and ginger. Set aside.

Sear: Heat the avocado oil in large pan over medium/high heat. Season the pork lightly with salt and pepper. Then sear on both sides for 4-5 minutes or until golden brown.

Cook: Place the pork in the slow cooker. Then pour the sauce over it. Cook for 3-4 hours on high or 4-6 hours on low.

Simmer: After the pork is done cooking, remove it from the pot. Then slowly stir in the cornstarch into the sauce in the slow cooker. Turn the slow cooker to high. Let the sauce simmer until it thickens. Then pour it over the pork.
