📝 Ingredients
- 800 g ( 1.7lb) of salted codfish
- 1 kg ( 2.2lb ) of potatoes
- 50 g ( 1.7oz ) of Taggiasca pitted olives
- 2 cloves of garlic
- 30 g (1oz) of pine nuts
- parsley
- Extra Virgin olive oil
👨🍳 Instructions
- 1let the salt cod soak in fresh water for 48 hours, changing the water two or three times a day
- 2Boil the codfish, without adding salt, for about 20 minutes
- 3in a large pot, boil potatoes, previously cutted into pieces, into saltless water
- 4remove the codfish from the cooking water and remove the skin and bones
- 5Drain the potatoes and place them into a pan.
- 6Add the salt cod to the potatoes and mix
- 7Add one by one the remaining ingredients
- 8Stir adding plenty extra virgin olive oil to make a creamy mixture
- 9Serve this dish warm or cold
