Farro Veggie Cakes - Mini Burger Patties

This easy recipe for crispy pan-fried farro cakes is healthy, vegan, delicious and perfect to use up leftover farro - Serve these fiber-rich and protein-packed veggie burger patties as a snack, side dish, on top of burger buns or wrapped in naan bread, flatbread or tortillas with your favorite dips!

Ingredients

  • 7 oz farro verde (or other cracked grains)
  • 400 ml vegetable broth
  • 1 onion (finely chopped)
  • 4 cloves of garlic (finely chopped)
  • 1 large carrot (grated (optional))
  • 1/2 bunch parsley (chopped)
  • 2-3 tbsp flaxseed flour (or 3-4 tbsp oat flour)
  • 2 tbsp nutritional yeast flakes
  • 1 tbsp tomato paste
  • 1-2 tsp yellow mustard (medium hot)
  • salt and pepper (to taste)
  • 3 tbsp breadcrumbs (or ground nuts or seeds)
  • vegetable oil (for frying)

    Bring the vegetable broth and farro to a boil in a saucepan. Then turn off the heat and allow to soak for 15-20 minutes (or according to package directions) until tender.

    Meanwhile, finely grate the carrot and finely chop the parsley, onion and garlic.

    Heat about 2 tsp of oil in a small pan and sauté the onion for about 2-3 minutes until translucent. Then add the garlic and sauté for another minute.

    Add cooled farro, carrots, parsley, onion, garlic, nutritional yeast flakes, tomato paste, mustard, a little salt and pepper in a bowl. Sprinkle with flaxseed flour and knead everything until it forms a dough. Taste and adjust seasonings if necessary. Cover the bowl loosely with a cloth and let it rest for at least 20 minutes (or overnight in the refrigerator) so that the flaxseed flour can swell (if the mixture is still too soft after chilling, you can add some flour, ground oats or breadcrumbs).

    Lightly moisten your hands, form approx. 12 patties of 60-65 g each from the mixture and roll them in breadcrumbs.

    Heat about 2 tablespoons of oil in a large frying pan and fry the patties over medium-high heat for 4 minutes on each side until golden brown and crispy (do not flip the patties too soon or they may fall apart! Once the bottom is golden brown and crispy, you can flip them easily).

    Serve the patties on lettuce with dill pickles and sprinkle with parsley, if desired. They are perfect as a side dish for potato salad, pasta salad, Buddha Bowls or wrapped in naan bread, flatbread or tortillas. Pair with dips like hummus, tzatziki, aioli, herb dip or just ketchup.
