Kiełbasa and Rice Skillet

This Kiełbasa Fried Rice is a one-pan wonder. Full of smoky sausage, fluffy eggs, and toasty rice - plus all the lonely veggies that are already sitting in your refrigerator. If you have 15-20 minutes, you’re up for a treat!

Ingredients

  • 1 medium (4.5 oz, 130 g) onion
  • 1 (7 oz, 200 g) red bell pepper
  • 1 (7 oz, 200 g) yellow bell pepper
  • 5 mushrooms finely sliced
  • 9 oz (250 g) kiełbasa sausage
  • 1 tbsp sesame oil
  • 0.5 cup frozen peas and carrots
  • 2 eggs, lightly beaten
  • 1.5 cups (375 g) cooked rice
  • 2 tbsp soy sauce
  • 2 tbsp chopped green onions (optional)
