Ingredients

  • 1 1/2 Tbsp Chinese sesame paste
  • 1 Tbsp white miso paste
  • 2 tsp doubanjiang chili bean paste
  • 1/4 cup unsweetened almond milk
  • 1 Tbsp vegetable oil
  • 1 medium shallot
  • 2 garlic clove
  • 1/2 tsp grated fresh ginger
  • 1.764 oz shiitake mushrooms
  • 2 cup vegetable broth
  • 4 head baby bok choy
  • 5.291 oz fried tofu puff
  • 1 tsp toasted sesame oil
  • 12.698 oz fresh udon noodles
  • 1/4 medium carrot
  • 1/2 cup fresh bean sprouts

Instructions

    In a small bowl, mix the sesame paste, miso paste, bean paste, and almond milk.

    Drizzle the oil in a sauté pan over medium-high heat. When hot, add the shallot, garlic, ginger, and shiitake and cook for 5 to 7 minutes.

    Add the broth and miso mixture to the pot. Bring to a boil, reduce to a simmer, and cook uncovered for 5 to 7 minutes.

    In the last 30 seconds add bok choy, tofu, and sesame oil.

    Meanwhile, cook the noodles separately for 30 seconds, or according to the package instruction. Drain and add to the bowls.
