Vegan Yakisoba

Yakisoba is a Japanese stir-fried noodle dish that combines ramen-style noodles with some (mock) meat, veggies and umami yet slightly sweet yakisoba sauce. For this recipe, we make our own sauce, which is surprisingly simple and super delicious!
Ingredients
- 7.055 oz yaki soba noodles
- 1/2 Tbsp vegetable oil
- 7.055 oz mock chicken pieces
- 1/2 Tbsp vegetable oil
- 3.351 oz shiitake mushrooms
- 1 small onion
- 1 medium carrot
- 2 cup shredded green cabbage
- 2 stalk green onion
- 1 cup fresh bean sprouts
- 3 Tbsp reduced-sodium soy sauce
- 3 Tbsp mushroom stir-fry sauce
- 3 Tbsp ketchup
- 1 Tbsp vegan Worcestershire sauce
- 1 tsp light brown sugar
Instructions

Cook the noodles according to the package instructions, then drain and set aside.

Meanwhile, mix together all the sauce ingredients in a small bowl.

Heat some oil in a sauté pan over medium-high heat. Add the mock “chicken” to cook until golden. Then transfer to a plate.

Heat some more oil in the now-empty pan, and add in the cooked noodles. Cook until lightly golden, about 4 minutes, stirring minimally. Transfer to a plate and set aside.

Add the shiitake mushrooms to the now-empty pan. Cook for 2 to 3 minutes.

Add onion, carrot, and cabbage. Cook for another 3 minutes.

Lastly, add the noodles, mock 'chicken', sauce, green onions, and bean sprouts (if using). Cook for another 3 to 4 minutes until fully heated through.
