Shallot Dressing

This simple dressing with shallots is a quick and elegant way to elevate everyday salads. Thinly sliced shallots are softened in tangy white wine vinegar, then whisked with extra-virgin olive oil, maple syrup, and a touch of Dijon mustard for a perfectly balanced vinaigrette. It’s sweet, sharp, rich, and silky, plus it pairs especially well with lentil or grain-based bowls, or hearty greens like a green bean salad.
Ingredients
- 1 medium shallot
- 1/3 cup extra-virgin olive oil
- 1/4 cup white wine vinegar
- 1/4 cup maple syrup
- 2 tsp Dijon mustard
- 1/8 tsp salt
- 1/8 tsp ground black pepper
Instructions
- 1
Combine the shallot and vinegar in a small bowl. Let sit for at least 3 minutes to help soften the shallot and infuse the vinegar.
