Grilled Peach Bruschetta

This delicious variation of the classic bruschetta incorporates sweet, deeply caramelized peaches that complement the savory tomatoes to perfection. Made with canned peaches, this recipe offers a slice of summer all year round. But of course, if peaches are in season, feel free to use fresh ones instead!

Ingredients

  • 2 canned peaches
  • 2 cup cherry tomatoes
  • 1 garlic clove
  • 1/2 cup fresh basil leaves
  • 1 Tbsp extra-virgin olive oil
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper
  • 1 Tbsp olive oil
  • 4 slice sourdough bread
  • 3/4 cup plain vegan cream cheese

Instructions

    Bring a grill pan to medium-high heat. Then cook the peaches until deeply caramelized, around 3 to 4 minutes on each side. Set aside to cool down slightly.

    Add the remaining bruschetta ingredients to a large bowl. Set aside.

    Once cool enough to handle, dice the peaches.

    Add them to the bowl and stir to combine. Set aside.

    Heat the oil in a grill pan over medium heat. Toast the bread slices until golden on both sides.
