The perfect lightly cured salmon salad perfect for any meal.
📝 Ingredients
- 1.5 kg salmon skin on bones removed
- 150 g coarse sea salt
- 150 g brown sugar
- zest of 1 lime
- zest of 1 lemon
- 2 g freshly ground black pepper
- 4 large eggs
- 1 L boiling water
- 1 g salt
- 100 g good quality mayonnaise
- 10 g anchovies
- 20 g water
- 100 g rocket leaves
- 10 g chives (chopped )
- 1 g salt
- 2 g freshly cracked black pepper
- Fresh lemon or lime
👨🍳 Instructions
- 1--- For the salmon ---
- 2Cover the fish all over with the salt, sugar, pepper, and zest.
- 3Store in fridge for 12 hours.
- 4Wash of after 12 hours and pat dry with cloth.
- 5Store in the fridge till needed.
- 6--- For the eggs ---
- 7Boil eggs for exactly 6 minutes and chill in cold water for 2 minutes before peeling and cutting in half.
- 8--- For the anchovy dressing: ---
- 9With a hand-held blender blend all till smooth. Reserve in the fridge till needed.
- 10--- To assemble: ---
- 11Cut the cured salmon thinly(without the skin).
- 12Place rocket leaves in a large salad bowl.
- 13Place salmon and halved eggs randomly on top of the salad.
- 14Dress with anchovy mayonnaise, chopped chives and finally freshly cracked black pepper.
