Turkey tetrazzini

Tetrazzini is an American pasta dish with a creamy sauce and either poultry or seafood. This is our take on it using turkey, try using your Christmas leftovers

Ingredients

  • Tabasco sauce
  • 300 g cooked turkey diced
  • 200 g sliced chestnut mushrooms and fried in a little butter
  • until smooth white sauce or butter or flour or hot chicken stock
  • 1 yolk egg lightly beaten
  • 1 tbsp dry sherry
  • 3 tbsp single cream
  • 200 g spaghetti cooked following the packet instructions
  • grated to make 4 tbsp parmesan

Instructions

    Add a few drops of tabasco to the white sauce and whisk in the egg yolk, sherry and cream.

    Stir in the turkey and mushrooms.

    Layer the spaghetti with the sauce in an ovenproof dish, sprinkle with parmesan and grill until browned.
