Blueberry Corn Muffins

These blueberry cornbread muffins are tender and buttery, lightly sweetened with honey and brown sugar, and packed with blueberries.
Ingredients
- 1 cup (156 grams) cornmeal (*see note)
- 1 cup (120 grams) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (4 ounces/ 113 grams) salted or unsalted butter, melted
- 2 tablespoons (25 grams) olive, vegetable, or canola oil
- 1/4 cup (84 grams) honey
- 1/4 cup (54 grams) packed brown sugar, light or dark
- 2 large eggs (100 grams)
- 1 cup (227 grams) buttermilk
- 8 ounces fresh or frozen blueberries (about 1 1/3 cup)
- Honey butter, for serving, optional: 1 stick (4 ounces/ 113 grams) of salted butter, softened + 2 tablespoons honey

Heat the oven to 350 degrees and line...: Heat the oven to 350 degrees and line a 12-cup muffin pan with tulip paper liners (*see note).

Divide the batter between the 12 muffin cups....: Divide the batter between the 12 muffin cups. Distribute the blueberries evenly on top of the muffin batter. The blueberries will sink down into the muffins as they bake. Place the muffin tin in the center of the oven and bake for 20-30 minutes (if using frozen berries, the muffins will take a bit longer to bake than if using fresh berries). To test that the muffins are done, insert a toothpick into the center of one of the muffins and remove it. If there is no raw batter on the toothpick, the muffins are done.
