Ingredients

  • For Silken Tofu Chocolate Pudding
  • 300 g silken tofu
  • 3 1/2 tablespoons unsweetened cacao powder
  • 6 soft dates, pitted (add more if you prefer a sweeter pudding)
  • About 5 tablespoons milk of choice (around 75 ml)
  • 3 tablespoons melted dark chocolate (75%)
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant coffee
  • 1/4 teaspoon salt
  • For Garnish
  • Sliced strawberries
  • Cacao powder, for dusting
  • Shaved dark chocolate
  • NOTE: Some ingredients can be replaced with their vegan counterparts.

    Add the silken tofu, cacao powder, salt, vanilla extract to a blender jar.

    Also add melted dark chocolate, dates, and milk. Blend until smooth and creamy.

    The add the instant coffee powder and blend again until silky smooth and fully combined.

    Pour the pudding into transparent serving glasses or dessert cups. Cover with plastic wrap and chill in the refrigerator for 1 to 2 hours, or until nicely set and thickened.

    Garnish with sliced strawberries, a dusting of cacao powder, and shaved dark chocolate before serving.
