Ingredients

  • For the Homemade Blueberry Syrup
  • 1 cup fresh or frozen blueberries
  • 2-3 tablespoons brown sugar
  • 1/4 cup water
  • 1/4 teaspoon ground cinnamon
  • For the Blueberry Iced Latte (1 serving)
  • 4 tablespoons homemade blueberry syrup (or to taste)
  • 1 cup ice cubes
  • 1 cup chilled unsweetened oat milk (or any milk of your choice)
  • 1 shot (about 30 ml/1 ounce) espresso
  • For the instant coffee option
  • 2 teaspoons instant coffee
  • 2 tablespoons hot water
  • NOTE: Some ingredients can be replaced with their vegan counterparts.

    Add the blueberries, brown sugar, water, and ground cinnamon to a saucepan.

    Cook over medium heat until the blueberries soften and release their juices. Continue cooking for about 8–10 minutes, or until the mixture slightly thickens and becomes syrupy.

    Remove the saucepan from the heat and let the mixture cool for about 5 minutes. Blend the mixture using an immersion blender (or a regular blender) until smooth. Use the syrup as is for a more intense blueberry flavor, or strain it through a fine-mesh strainer for a smooth syrup. Let the syrup cool completely before using.
