A really simple, clean dish. Stuffed chicken breasts taken to a new level.

📝 Ingredients

  • 400 g Bulgur Wheat
  • 4Breast Chicken
  • 2 tbsp Red Pesto
  • 200 g Spinach
  • 250 g Mascarpone
  • 1 Lemon
  • 5 tsp Dried Oregano
  • 1Cube Chicken Stock
  • Salt
  • Black Pepper
  • Olive Oil

👨‍🍳 Instructions

  1. 1Preheat oven to 180°C/356°F.
  2. 2Chuck all of your spinach in a pan and wilt it. Remove from the heat. Place the wilted spinach in a sieve and squeeze out the water.
  3. 3Put the spinach in a bowl. Add red pesto and mascarpone. Season with salt and pepper and mush everything together.
  4. 4In another bowl, add oregano, the zest of a lemon, salt and pepper. (This will be the rub to go on the outside of the breasts). Mix it together and set aside.
  5. 5Chicken Time. Take each chicken breast and cut a hole in the thicker side of the breast. Use your fingers to prod away until you have made a cavity inside the breast.
  6. 6Spoon in your filling to each chicken breast. You want them to be really filled up. Once you have done this to all the chicken, roll them in the oregano and lemon zest rub.
  7. 7Get a pan on a medium heat. Add a drizzle of olive oil and then add your chicken. Cook for 4 minutes on each side so they are nicely browned and caramelised.
  8. 8Place the pan in the oven for 12 minutes, until cooked through.
  9. 9Add the bulgur wheat to a pan of boiling water and crumble in a chicken stock cube for extra flavour. Cook according to pack instructions.
  10. 10Serve the breasts on the steaming hot bulgur wheat with some lemon juice squeezed over the top. Enjoy!
