This shrimp ceviche is super easy to make and a great appetizer for special occasions and regular day meals.

📝 Ingredients

  • 1 lb shrimp ((chopped into 1/2 inches))
  • 1 large jalapeno pepper ((seeded and chopped into cubes))
  • 1 cup cherry tomatoes ((chopped into quarters))
  • 1 small red onion ((chopped into cubes))
  • 1 avocado ((chopped into 1/2 inches))
  • 2 sprigs cilantro ((for garnish))
  • 1 cup lime juice ((freshly squeezed))
  • 1/2 tsp salt ((or to taste))

👨‍🍳 Instructions

  1. 1Place the shrimp in a mixing bowl and pour the lime juice on the shrimp, mix well.
  2. 2Add the jalapenos, tomatoes, and onions to the shrimp.
  3. 3Cover the bowl with a plastic wrap and place in the refrigerator to chill for a minimum of 4 hours.
  4. 4Pour out most of the lime juice from the bowl, season the ceviche with salt.
  5. 5Add the avocados to the ceviche, gently mix well and garnish with chopped cilantro.
