Our deliciously decadent, silky-smooth and creamy copycat Ruth's Chris creamed spinach recipe is thickened with a simple roux and lots of butter.
📝 Ingredients
- 1 pound fresh spinach
- 6 tablespoons butter
- 1/4 cup all-purpose flour
- 3 tablespoons chopped yellow onion
- 1 small bay leaf
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups whole milk
- Optional ingredient:
- 2 tablespoons softened butter
👨🍳 Instructions
- 1Wash the spinach and remove the stems. Set it aside.
- 2Bring a large pot of water to a boil.
- 3Meanwhile, prepare a large bowl of ice water.
- 4Place the spinach in the boiling water and cook for 1 minute.
- 5Drain the spinach and submerge it in the ice bath to stop further cooking.
- 6Drain the spinach again and squeeze out as much water as you can.
- 7Place the spinach in a food processor and process until pureed. Set it aside.
- 8Melt the butter in a medium saucepan on medium-low.
- 9When the butter is hot, add the flour and whisk continuously until bubbly and cooked, about 45 seconds.
- 10Add the onion, bay leaf, salt, and black pepper, and cook for 2 minutes, stirring frequently.
- 11Pour in the milk and whisk continuously for about 5-7 minutes until the mixture is thickened and bubbles start to appear.
- 12Strain out the onions if desired and remove the bay leaf.
- 13Add the spinach in the sauce and stir to mix well. Lower the heat and cook for 5 minutes on low, stirring frequently.
- 14Before serving, stir in the remaining 2 tablespoons of softened butter if desired. Taste and adjust for salt and black pepper. Serve warm.
