Crispy tortilla strips top off our copycat chicken tortilla soup, making for a cozy, comforting bowlful that feels a whole lot like Chick-fil-A's version.
📝 Ingredients
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 ribs of celery, diced
- 1 red bell pepper, seeded and diced
- 3 garlic cloves, minced
- 6 cups chicken stock
- 2 (4-ounce) cans diced green chiles
- 2 teaspoons chili powder
- 2 teaspoons onion powder
- 2 teaspoons cumin
- 2 teaspoons oregano
- 3 cups cooked, shredded chicken breast
- 1 cup frozen corn
- 1 (14-ounce) can navy beans, drained and rinsed
- 1 (14-ounce) can black beans, drained and rinsed
- 2 tablespoons masa flour
- 1/4 cup water
- 3/4 cup heavy cream
- 2 teaspoons sea salt
- 1 teaspoon ground black pepper
- Tortilla strips, for garnish
👨🍳 Instructions
- 1Heat the olive oil in a large soup pot.
- 2Saute the onion, celery, peppers, and garlic until soft.
- 3Add the chicken stock, green chiles, chili powder, onion powder, cumin, and oregano.
- 4Add the shredded chicken, corn, navy beans, and black beans. Bring to a boil, then simmer for 10 minutes.
- 5Combine the masa flour and water and whisk until smooth. Add the masa flour paste to the soup and whisk until incorporated. Simmer for an additional 5 minutes until the soup has thickened.
- 6Stir in the cream, salt, and pepper, and simmer gently until warmed through.
- 7Ladle the soup into bowls. Top with tortilla strips and serve.
