Whole catfish stuffed with a blended habanero, garlic, and fresh herb marinade, then wrapped in foil and slow-roasted in the oven until fall-off-the-bone tender. Bold African flavor, only 3g carbs per serving.

📝 Ingredients

  • 1 catfish (1 medium catfish, about 1.5lbs)
  • 1 lemon (to clean the fish)
  • 1/2 red bell pepper (de-seeded)
  • 1 habanero pepper
  • 1/2 medium onion (cut in large pieces)
  • 2 cloves garlic (peeled)
  • 1 thumb ginger (peeled)
  • 1/2 sprig thyme leaves
  • 1/2 sprig dill
  • 1 sprig sage
  • 1/2 tsp salt (or to taste)

👨‍🍳 Instructions

  1. 1Preheat oven to 400F.
  2. 2Clean and gut the fish. Use the lemon to clean the fish by squeezing the lemon juice on the fish and rubbing it in. Rinse thoroughly when done.
  3. 3Place the red bell pepper, habanero, onions, herbs and spices in a blender and blend till smooth.
  4. 4Make shallow slices on the fish, about 3 - 4 on both sides.
  5. 5Scoop about half of the pureed mixture into these holes and in the center slit. Keep the other half to use later.
  6. 6Completely wrap the fish in foil and place in bottom rack of oven for 45 mins.
  7. 7Open the foil at the top and leave the fish in for another 5 minutes.
  8. 8Bring out the fish from the oven and pour the remaining pureed mixture over the fish and serve.
