This stuffed turkey breast is my favorite way to make a smaller, more manageable holiday main that still feels special. The filling of mushrooms, spinach, and brie keeps it juicy and full of flavor.

📝 Ingredients

  • 2 tablespoons olive oil
  • 1/2 medium onion (minced)
  • 3 cloves garlic (minced)
  • 1 1/2 tablespoons fresh herbs (chopped (such as sage, rosemary, thyme))
  • 6 oz portobello mushrooms (thinly sliced)
  • 5 oz spinach
  • 1/4 c pine nuts
  • 3 1/2 lb turkey breast (young)
  • 6 oz brie cheese (thinly sliced)
  • salt (pepper)
  • 1 tablespoon butter

👨‍🍳 Instructions

  1. 1Preheat the oven to 350°F and line a baking dish with parchment paper.
  2. 2Heat olive oil in a medium pan over medium heat. Add onion and saute, stirring occasionally, for 5-7 minutes until it softens.
  3. 3Add mushrooms and cook for about 10 minutes until they start to brown. Season with ½ teaspoon of salt and ¼ teaspoon of pepper, and add 1 tablespoon of fresh herbs.
  4. 4Stir in spinach and cook until it’s wilted, about 2 minutes. Add pine nuts and remove from the heat. Transfer the filling to a bowl to cool. If necessary, add more salt and pepper.
  5. 5Lay the turkey breast on a cutting board. Insert the knife horizontally into the thickest side of the turkey breast. Carefully cut along the length of the breast, maintaining the knife parallel to the board, and stop cutting about 1/2 inch before the opposite edge.
  6. 6Open the turkey breast. Cover it with a film and, using a meat tenderizer or rolling pin, pound the turkey breast starting from the thickest part until the entire piece has the same thickness. Season the turkey with ½ teaspoon of salt and ¼ teaspoon of pepper.
  7. 7Before putting the filling on a turkey, make sure the filling is well-drained, and there’s little to no liquid in the bowl.
  8. 8Arrange sliced brie on a turkey breast, leaving a 1 to 1 ½ inch border. Spread the mushroom spinach filling evenly over the cheese. Tightly roll the turkey breast and use kitchen twine to tie the roll.
  9. 9Place the turkey seam-side down in a prepared baking dish, or if you will make a gravy afterward, put the turkey rolls on a baking rack placed inside the baking dish.
  10. 10Brush with melted butter mixed with the remaining ½ tablespoon of chopped herbs.
  11. 11Bake for 1 hour 15 minutes to 1 hour 45 minutes, or until the internal temperature reaches 185°F, basting the turkey 3-4 times during baking.
