Ukrainian Cottage Cheese Dumplings

I make these Ukrainian Cottage Cheese Dumplings whenever I want something cozy but not complicated. The farmer’s cheese gives them a tender, creamy texture, and a touch of lemon zest keeps them bright. They’re best served warm with a spoonful of sour cream.

Ingredients

  • 16 oz farmers cottage cheese ((2 cups))
  • 2 eggs
  • 1/4 cup cane sugar
  • 1 lemon (zested)
  • 1/4 teaspoon salt
  • 3/4 cup all-purpose flour (plus more for dusting)
  • butter (for serving)

Instructions

  1. 1

Press the farmer’s cottage cheese through a fine-mesh sieve into a large bowl.

  2. 2

Add the eggs, sugar, lemon zest, and salt. Mix until smooth and well combined.

  3. 3

Stir in the flour until a soft dough forms. The dough will be slightly sticky but should hold together and be easy to shape.

  4. 4

Lightly flour a work surface with about 2 tablespoons of flour. Divide the dough into portions and take one portion at a time. Roll it into a log about 1 inch in diameter.

  5. 5

Lightly dust the log with flour, then use a knife to cut it at a slight angle into 1-inch pieces. Sprinkle the pieces with a little more flour to prevent sticking.

  6. 6

Repeat with the remaining dough. If the dough becomes too sticky, add a little more flour, 1 to 2 tablespoons at a time, until manageable.

  7. 7

Bring a large pot of water to a boil, then reduce the heat to a gentle boil. Carefully add the dumplings in batches, making sure not to overcrowd the pot.

  8. 8

Once the dumplings float to the surface, cook for an additional 2 minutes. Remove with a slotted spoon and transfer to a bowl.

  9. 9

Add a small amount of butter to the cooked dumplings and gently toss to coat. Continue cooking the remaining batches.

  10. 10

Once all dumplings are cooked, add a little more butter and gently toss to coat evenly.

  11. 11

Serve immediately with sour cream or your favorite jam.
