Creamy Lemon Chicken

Ingredients
- 2 (8-ounce) boneless skinless chicken breasts, sliced horizontally into cutlets
- Kosher salt and pepper, for seasoning chicken
- 1/3 cup all-purpose flour
- 3 tablespoons Land O Lakes® Butter divided
- 1 tablespoon olive oil
- 1/4 cup finely chopped shallot
- 1 teaspoon finely chopped fresh garlic
- 1/2 teaspoon kosher salt
- 3/4 cup chicken broth
- 1 tablespoon freshly grated lemon zest
- 2 tablespoons lemon juice
- 1/2 cup Land O Lakes® Heavy Whipping Cream

Season both sides of cutlets generously with salt and pepper; coat with flour, shaking off excess.

Combine 1 tablespoon butter and olive oil in large pan over medium heat. Add chicken; cook, turning chicken, 8 minutes or until golden brown on both sides. Remove chicken to plate.

Add remaining 2 tablespoons butter, shallot, garlic and 1/2 teaspoon salt to same pan; cook, stirring constantly, 1 minute. Add chicken broth, lemon zest and lemon juice; cook until reduced by one-third. Stir in whipping cream; bring to a simmer. Return chicken breasts to sauce, turning to coat. Cook 5 minutes or until chicken is cooked through. Serve with sauce.
