Strawberry Buckle

Dense, buttery and bursting with fresh strawberries, this warm buckle is a spring or summer treat worth the oven time.
Ingredients
- 1/2 cup Land O Lakes® Butter
- 1 cup (120 grams) all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
- 1 cup buttermilk
- 1 1/2 cups fresh strawberries, cut into bite-sized pieces
- Sanding sugar, as desired for topping
- Ice cream or whipped cream, as desired
Instructions

Heat oven to 375°F. Place butter into 9-inch square baking pan; melt in oven 5 minutes. Remove from oven; set aside.

Stir together flour, granulated sugar, baking powder, salt and cinnamon in bowl. Stir in buttermilk until well combined. Pour batter into pan with melted butter; stir gently until mostly combined. (It's okay if some streaks of butter remain.) Sprinkle strawberries evenly over batter. Sprinkle generously with sanding sugar.

Bake 35-40 minutes or until deep golden brown and toothpick inserted in center comes out clean. Cool at least 10 minutes. Serve warm with ice cream or whipped cream, if desired.
