An easy, creamy and versatile dill sauce with sweet, herby and citrusy flavor, that takes just 15 minutes to prepare and tastes great when served with salmon or trout.

📝 Ingredients

  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 3/4 cup milk
  • 1 1/4 cup veg stock or chicken broth
  • 1/2 tsp ground nutmeg
  • 1 lemon (juice + zest) (1 tablespoon of lemon juice)
  • 4 tbsp fresh dill ( finely chopped)
  • 1 tsp freshly ground black pepper

👨‍🍳 Instructions

  1. 1Place a pan on a medium heat, add the butter and stir in the flour when the butter starts to melt to form a thick paste.
  2. 2Pour on the milk and add the fish stock and continue to stir until the sauce thickens.
  3. 3Stir in the ground nutmeg, dill and lemon zest. The sauce should have a thick and creamy consistency yet still be pourable. Add a little more stock if it is too thick.
  4. 4Serve with grilled or baked salmon fillets and lemon slices.
