Ingredients

  • 2 chicken breasts
  • 1 Tablespoon taco seasoning
  • 1 teaspoon cumin
  • 1/4 teaspoon fine sea salt
  • 2 Tablespoons olive oil (divided)
  • 1/3 cup Greek yogurt
  • 2 Tablespoons olive oil
  • 1/2 ripe avocado (peeled and pitted, save remaining half for salad)
  • 1/4 cup water
  • 1/2 cup chopped green onion
  • 3/4 cup cilantro leaves
  • 2 cloves garlic (minced)
  • Juice of 1 lime
  • 1/2 teaspoon salt
  • 1/2 cup Greek yogurt
  • 1 head shredded romaine lettuce
  • 1 1/2 ripe avocados (sliced)
  • 1 medium tomato
  • 1 cup black beans
  • 1 cup corn
  • 1/4 red onion (diced)
