Cottage Cheese Pizza Crust

This high-protein cottage cheese pizza crust is chewy, crisp on the edges, and so delicious. It's also super easy to make, with no yeast!
Ingredients
- 1 cup cottage cheese
- 1 cup 00 Flour (or all purpose is fine)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 tablespoon olive oil

Preheat oven to 425°F.

Add cottage cheese to a blender or food processor, blend until smooth and creamy.

To a medium bowl add flour, baking powder, salt and the blended cottage cheese. Using your hands, begin to incorporate flour with the cottage cheese. Once it starts to look more like a ball transfer your dough to a flour surface.

Knead the dough between 5-8 times, basically until the dough is no longer sticky and the texture is smooth. (Note: if you dough is sticky add flour little by little)

Once your dough is ready, using a rolling pin, roll dough into a circle that is about 1/2″ thick and 11″ in diameter. It doesn’t need to be perfect just get it close.

Line a large baking sheet with parchment paper. Transfer your pizza to the prepared baking sheet.

Brush the outside of the pizza crust with olive oil.

Place in oven and bake for 8 minutes.
