Banana Oatmeal Cookies with Chocolate Chips

Soft, chewy, and lightly sweet, these Banana Oatmeal Cookies are an easy wholesome treat made with oats, ripe bananas, and chocolate chips.

Ingredients

  • 2 cups quick oats
  • 3 overripe bananas, about 2 cups
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips

    Preheat oven to 350°F.

    To large bowl add banana, brown sugar, honey, egg and vanilla. Using a spatula mix everything together.

    Next add in oats, cinnamon and salt. Mix to incorporate everything.

    Lastly, add chocolate chips and mix until everything is well combined.

    Line a baking sheet with parchment paper or a silicone mat.

    Using an ice cream scoop about 2 tablespoon, scoop batter and place on prepared baking sheet. Keep them about an inch apart. They don’t spread to much.

    Baked for 12-15 minutes until the tops are just set.

    Remove from oven and let rest on a baking rack for 5-10 minutes before eating. Serve.
