The main ingredients for a nice pot of this dish are just the pork trotters, ginger and the sweet sour vinegar. It's full of ginger aroma and the pig's trotters are so moist, tender and succulent, after the slow simmering in the aromatic yet pungent sweet and sour black vinegar.

📝 Ingredients

  • 2 pork trotters (cut across the bone into 3 cm pieces.)
  • 200 grams ginger (old and young, cut into thick pieces.)
  • 150 grams palm sugar
  • 2 cups mixed black vinegar (premixed (sweet and sour vinegar))
  • 1 cup sweet black vinegar
  • 1 cup water
  • 1 tbsp sesame oil
  • 1 tbsp light soy sauce

👨‍🍳 Instructions

  1. 1First peel the gingers and cut into thick slices.
  2. 2Bring a large wok of water to a boil. In batches, lightly blanch the pork trotters for 2 minutes to remove any impurities.
  3. 3Then wash the pork trotters in cold water. Drain and set aside. And we're ready to cook the dish!
  4. 4In a large pot and over low heat, shallow fry palm sugar and ginger slices till palm sugar has dissolved.
  5. 5Then add in sesame oil and saute until the ginger aroma is released.
  6. 6Next, add in the drained pork trotters and stir fry for 2-3 minutes until they are well coated with the sesame oil.
  7. 7Add in 2 cups or 1 bottle of pre-mixed (sweet and sour) Chinese black rice vinegar.
  8. 8Then pour in 1 cup or half a bottle of sweet Chinese black rice vinegar.
  9. 9Next, add in just enough water, making sure the meat is covered with liquid.
  10. 10Then, add in light soy sauce and bring the liquid to a boil.
  11. 11Cover with a lid and simmer for 30 minutes or until the pork is tender.
  12. 12Adjust taste accordingly and we're done! Leave the pork stew for at least 3 hours or more to allow the flavour to infuse into the meat thoroughly. Reheat before serving.
  13. 13Best to serve this pork stew hot with white rice. So Enjoy!
